Ever get home starving after a long day of work and realize you have nothing to eat?
This is and issue my pal, Erin Stutland, runs into on a regular basis. Erin is talented coach for creative professionals and entrepreneurs, a fitness expert, and an actress (she’s appeared in The Soprano’s and Mad Men – my two all-time favorite shows!) and shares incredibly inspiring and entertaining videos on her blog, like this one.
Erin often gets home late during the week after teaching her fitness and coaching classes in NYC, like Shrink Sessions, exhausted and hungry. She takes one look at her pantry and fridge, has no idea what to make, and orders take-out…which usually ends up being $20 a pop.
This girl has a lot on her plate – she knows she needs to feed herself with healthy, energizing food so she can stay on her game.
I decided to help her out by taking a peek in her pantry to see how we can set her up for easy, healthy, tasty meals that would take less time than waiting for the delivery guy. Click on this week’s video below to check it out:

Recipe: Soba Noodles and Greens with Peanut Sauce
Ingredients
buckwheat soba noodles (2 oz per serving)
kale (4-5 stalks or one big handful if using bagged kale from Trader Joe’s, for example)
1/4 cup frozen peas
2 tbsp tamari soy sauce
2 tbsp toasted sesame oil
2 tbsp peanut butter (or almond butter)
1 tsp brown rice vinegar
1 tbsp grated fresh ginger root
Directions
- Fill medium-sized pot with water, add generous amount of sea salt and bring water to a boil.
- Add soba noodles and tear up kale into bite-sized pieces with your hands and throw in pot.
- Cook according to soba noodle package directions, about 6-8 minutes.
- Meanwhile, add tamari, sesame oil, peanut butter, ginger root, and brown rice vinegar to small bowl and whisk with a fork until well-combined.
- Drain noodles and greens in a colander and toss in a handful of frozen pea (they defrost super-fast)
- Serve noodles in a small bowl, add a few spoonfuls of peanut sauce, stir, and enjoy!
Variations
- For added protein, top with cubed extra-firm tofu or shredded chicken (you can heat in pan with a bit of oil if you like)
- Substitute kale for spinach or broccoli (fresh or frozen)
- Squeeze a slice of fresh lime on top
- Top with chopped fresh cilantro

I make almost the same dish, but with a less exciting sauce – I usually boil the frozen peas and then add fresh spinach to colander so that they blanch when I drain the noodle water over them.
I’m going to try your way tonight with that delicious looking sauce!
