What to Do With All Those Veggies You Forgot About in Your Fridge

Here’s a big complaint I get from readers, friends, and clients:

At the end of the week I always find wasted vegetables in my fridge that I never did anything with.  It’s not worth buying all this fresh produce if I keep letting them go bad!

Do you ever do this?  Start off the week with the best intentions and end up with a week full of takeout and rotten vegetables?

Whelp, there’s something quick and easy you can do with them before they go bad.  Turn it into a light and satisfying dish that can be a great snack, breakfast, lunch, or dinner.

    Heather – Awesome use of old veggies thanks !! My mom makes something similar, but also adds a bit of leftover pasta to the mix. Now about that leftover chicken … are you thinking curry ?

  • Throw them all in with some pastured eggs and you have a fancy frittata!

  • Heather, thanks for the reinforcement. Love those frittatas. People need to make sure that the pan they use is ovenproof. I used 12 eggs and a 1/2 cup of whole milk mixed into the egg mixture (used an electric hand-held immersion mixer). Also, sliced up fresh mozzarella and laid it on top of the egg mixture on the stovetop. Delish! Keep those good ideas coming.
